The Coffee Archive is a page dedicated to coffees I've personally sourced (currently through brokers), roasted, and developed to perfection. Each coffee has its own story, so with each entry I will publish information about its origin, processing, varietal, and cupping notes. I'll also include a link to each coffee if they are still available.

Origin: Ethiopia, Sidamo, Hunkute Cooperative
Elevation: 1900-2200 Meters
Varietal: Kume, Dago, and Wolisha- a.k.a. Heirloom
Process: Natural, dried for two weeks
Cupping Notes: Sweet, fruity aroma with a hint of vanilla. Notes of blueberries, strawberry preserves, balanced sweetness, and a juicy finish.

Origin: El Salvador, El Bálsamo Quetzaltepec, Loma La Gloria
Elevation: 1500 Meters
Varietal: Red Bourbon
Process: Honeyed, blend of yellow and red
Cupping Notes: Balanced aroma of sweetness and pleasant chocolate tone. Forward notes of crisp acidity with pear, chocolate and caramelized sugars.
