Cometeer – Is Frozen The Future Of Specialty Coffee?

Instant coffee has come a long way... from those dehydrated Foldgers crystals.  Today we've got coffee in tea bags, super concentrate, and even specialty instant, but there's still room for the bar to be raised.  This brings me to the newest, and dare I say most unique option to enter the market lately, Cometeer. They call...

March 2019 La Marzocco Subscription – Counter Culture

Counter Culture is a veteran... in the specialty coffee industry.  Born out of North Carolina in 1995 this wholesale juggernaut has always put a main focus on quality coffee, education, and sustainability.  Their story is full of breakthroughs and pushing the industry as a whole forward. Before it was the industry standard, they put their money...

February 2019 La Marzocco Subscription – Elixr Coffee

Elixir is one of those... roasters that you hear about pretty often if follow the specialty coffee industry as closely as I do.  Personally and professionally I have a ton of respect for them. For a roastery that is relatively young (established in 2010) they've really managed to create a name for themselves.  They're a highly...

January 2019 La Marzocco Subscription – Linea Caffe

In the spirit of full disclosure... I've had Linea Caffe's coffees a couple times before and have really enjoyed them.  The man at the helm of Linea Caffe is Andrew Barnett, master roaster and longtime coffee aficionado. He began Linea Caffe with the goal of wanting to "turn people onto the flavors of the world's finest...

December 2018 La Marzocco Subscription – Dapper & Wise

As a coffee professional... I'm ashamed to admit I've never been to Portland. Considering the sheer amount of amazing coffee in that town it is most definitely on my must-go list.  As part of that pilgrimage visiting the fine folks at Dapper & Wise will be on the itinerary.  Since I've already had a couple of...

Tis’ The Season – La Colombe’s Seasonal Draft Lattes

Those who know me best... would describe me as a purist. Whether it’s my taste in coffee, cars, or most things in my life. Simple is usually better. I also am not a sweet drink person, but it’s the season for pumpkin spice and peppermint mocha. So I decided to grab a couple of La Colombe’s...

October 2018 La Marzocco Subscription – Coffee Collective

I've never been to Denmark... but if I go I know I'll feel right at home at the Coffee Collective.  In 2007 they opened in Copenhagen with a great mission.  To create "exceptional coffee experiences in a manner that gives better living conditions to coffee farmers across the globe".  This practice is common within the third...

September 2018 La Marzocco Subscription – Go Get Em Tiger

In Los Angeles the options... for a place to grab a cup of coffee are near boundless.  To become a standout cafe among hundreds of others requires more than just good coffee.  A great location helps, a knowledgeable staff is of course a staple, but a unique style and culture is what pushes you past the...

August 2018 La Marzocco Subscription – Equator

Many great companies start in garages... and Equator Coffee is one of those companies.  Founded in Marin County in 1995 by Brooke MacDonnell and Helen Russell Equator started with a goal of building a coffee company focused on quality, sustainability, and social responsibility. As they've grown from a garage based roaster, to a company that touts...

July 2018 La Marzocco Subscription – La Colombe

I've never been to Philadelphia... but I hear its Always Sunny, and the cheesesteaks are to die for.  Yet, apparently the City of Brotherly Love is also the home of the growing coffee company La Colombe.  My first experience with their coffee was visiting my sister in Chicago.  It was June, it was humid, and I...

June 2018 La Marzocco Subscription – Sweet Bloom

This isn't my first foray with Sweet Bloom... just a few short months ago I picked up a bag at a local shop that is a multi-roaster.  I was immediately drawn to the bag.  There is something about the black and white coffee shrub with the colored tag that really was magnetic to me.  These bags...

The Chacra Project – Making Coffee & Lives Better

Coffee is a global community... so we should be involved globally.  This is easier said that done, but when the opportunity arrises we should all be jumping on it.  Recently, I had my friend and fellow coffee professional Pablo on the SproCast podcast to talk specialty coffee, and to promote a cause close to his heart;...

The Fellow Prismo – Will It Spro?

The Aeropress has always been in this middle ground... between espresso and a French Press.  On one hand its brewed under pressure, and on the other immersion is also part of the program.  It's never been a favorite of mine, the cup just doesn't have the clarity I look for in black coffee, or the complexity...

It’s impossible for me to resist... a special release coffee, especially when it’s from Kenya, or anywhere in Africa for that matter. I love African coffees. Damn Fine Tutorial – Aeropress

Step One The Aeropress is one of my favorite by-the-cup methods of coffee brewing.  What you'll need is the Aeropress cylinders, the cylinder screw top, a filter, something to stir it with, a gram scale, and of course a cup.  Once again I'll be brewing this to my tried and true 1:15 brew ratio of deliciousness....

January 2018 La Marzocco Subscription – Kickapoo

Balance isn’t just for tightrope walkers... It’s also an important factor in specialty coffee.  What it means is no single aspect overpowers the others.  Instead they help make each other better in contrast.  For example, this is why salt and caramel is so good together.  They are complimentary, they balance each other, and together they create...

Not All Cups Are Created Equal

A cup is just a vessel... that holds a liquid, and you drink out if it. Some are short, some are tall, some are glass, and some are ceramic. Its not until you think about it as another tool of the craft of making, and enjoying coffee, that you start seeing them in more specific terms....

December 2017 La Marzocco Subscription – Caffe Umbria

As a coffee enthusiast born out of the third wave... I tend to cringe at the term “Italian Espresso”. It’s not that it can’t be good, it’s just not on the flavor spectrum that I usually go for. Generally Italian’s roast quite a bit darker for their espresso than most of the modern specialty coffee roasters...

𝗪𝗮𝘁𝗲𝗿 𝗙𝗶𝗿𝘀𝘁, 𝗧𝗵𝗲𝗻 𝗖𝗼𝗳𝗳𝗲𝗲 - This morning I’m trying out the water first method on the Clever Dripper.

I wasn’t really sure what to expect, in terms of the outcome, but it was a tasty cup. Definitely tasted less like an immersion brew than I expected, and had some of the clarity that I love about a percolated method like a V60.

If you’re curious to give it a go, here’s what I did:

[0] Prepare and rinse the filter
[1] Add 240g of 205°F/96°C water
[2] Add 15g of coffee (medium-coarse)
[3] Start the timer and stir in the grinds
[4] Cover and let brew for 4 minutes
[5] Drain into cup and enjoy

Spinning metal, cutting and crushing. Soaked in boiling water, sometimes under immense pressure.

What we see as a calming moment of zen, is actually a pretty chaotic scene.

I think @postalservicemusic said it best; “everything looks perfect from far away”.
